Product Description
The fine-edge santoku—Japanese for 'three virtues'—excels at three cutting techniques: mincing, slicing and dicing vegetables and aromatics. How it's made: Handcrafted in Seki, Japan, the blade is constructed of microcarbide powdered MC66 steel, which is ice-hardened to an impressive 66 HRC. This results in an exceptionally sharp and lasting edge. The blade is wrapped in 132 additional layers of steel, resulting in a beautiful floral damascus pattern. The handles of the Miyabi Black series are made from beautiful black maple, which contrasts stunningly with the pattern on the blades.Additional features: The blade is balanced by a substantial D-shaped handle made of stunning black ash. Effortless to hold, the classic Japanese D-shape handle offers a comfortable grip for stress-free cutting.Sizing information: 16.75" x 3" x 1"; 7" blade; 0.8 lb.
